Quick and Easy Chicken

Are you tired of eating the same grilled chicken day in and day out? Here is a recipe that is quite easy to stir up in your kitchen if you don't have much ingredients to work with...





4 Servings, Prep Time: , Cook Time: 25-30 minutes

Description:

A tangy, quick, and easy chicken dish - prepared on the stove top in under 1/2 an hour! Quick and delicious! Serve over rice.

Ingredients:

2 tablespoons olive oil
1 onion, chopped
4 skinless, boneless chicken breast halves
3 tablespoons ketchup
2 tablespoons soy sauce
3 tablespoons white sugar (I used honey instead since I had no sugar)
2 tablespoons lemon juice
1 teaspoon ground black pepper

Directions:


Saute onion in oil until translucent.
Add chicken, and brown lightly.
Combine ketchup, soy sauce, sugar or honey, lemon juice, and pepper in a bowl; mix well. Pour over chicken, and bring to a boil. Cover, reduce heat, and simmer for 25 to 35 minutes.

Now for my sides, I minced up a clove of garlic, half an onion and sauteed them in a teaspoon of olive oil. Then after, I grabbed about a cup and a half of spinach and kale and mixed them up with a dash of Organic chicken broth for a bit of flavor. After letting the veggies wilt, I diced and added a few cherry tomatoes which gave it a bright color.

While this was all cooking, I washed my Organic sweet potato in cold water, wiped damply and wrapped in a foil. Placed the sweet potato in the oven for about 35-40 minutes and made sure it was ready by sticking a toothpick inside. You'll know when it's ready once it's soft.

You have the option to microwave your sweet potato for 2-3 minutes if you are in a hurry, however I'm use to baking it in the oven :) Hope you enjoy this easy made recipe!
